Four 5-ounce trout, whole
1 tablespoon olive oil
1/4 tsp dried thyme
1/4 tsp dried coriander
1/4 tsp dried marjoram
1/4 tsp dried rosemary
1/4 tsp dried basil
4 tsps fresh parsley, minced
4 tsps fresh mint, minced
1 lemon
Salt and pepper to taste
Preheat the broiler.
For the fish: In a bowl, blend the dry herbs. Place the trout on a flat surface and open them. Sprinkle some salt, pepper, and a large pinch of the dry herbs on each trout. Add 1 teaspoon fresh parsley and 1 teaspoon fresh mint. Sprinkle with a little lemon juice and close the trout. Place the trout on a greased baking pan. Sprinkle olive oil over the trout. Broil for 3 to 4 minutes. Carefully turn over, brush with oil, and continue to broil for another 3 to 4 minutes.
