2 lbs lean pork tenderloin, all visible fat removed
1/4 cup white vinegar
1/2 cup reduced-sodium soy sauce
2 tbsp minced garlic
Freshly ground black pepper to taste
1 tsp dried hot red pepper flakes
1. Cut pork into 1/2 inch thick medallions
2. In a rectangular glass baking dish, mix together vinegar, soy sauce, garlic, and pepper. Add pork and marinate 4 to 5 hours in the refrigerator, turning occasionally.
3. Preheat broiler.
4. Remove pork medallions from marinade (do not discard) and broil 7 minutes on each side about 4 inches from flame. (These are also delicious on a charcoal grill; cook over a medium fire 5 minutes on each side, then 10 minutes covered.)
5. While pork is cooking, bring marinade to a boil in a small saucepan. Add hot pepper flakes and reduce by one quarter. Strain and serve as a dipping sauce with pork.
