I recently read how important sweet potatoes are for your health. They contain carotenoids, vitamin e, potassium, fiber, and copper. They are easy to make and definitely worthwhile to eat.

Preparation Instructions

Buy firm, medium-size sweet potatoes without any cracks, bruises, or soft spots. Once you’ve bought them, remove the potatoes from the bag and store in a cool, dark, dry place for up to 10 days. Don’t refrigerate until after cooking.

Instructions

There are a few different options you can use to make them depending on how you might like it:
-Bake them: toss unpeeled sweet potatoes into the oven at 400 degrees and let cook for 30 min.
-Make home fries: coat peeled raw sweet-potato wedges with olive oil and roast on a baking sheet for 20 min. at 400 degrees.
-Mash them: steam peeled sweet-potato chunks for about 10 min. and mash with a bit of O.J.
-Use them as a topping: slice cold, cooked, peeled potatoes for snacks and side dishes.
