-1 red onion, thinly sliced
-4 tomatoes, sliced
-1/2 pound nonfat mozzarella, thinly sliced or shredded
-1/4 cup chopped parsley
-2 teaspoons chopped basil
-3 to 4 cloves garlic
-2 tablespoons extra-virgin olive oil
-2 teaspoons red wine vinegar
-Place a layer of onion on a serving dish
-Cover with a layer of tomatoes and a layer of mozzarella
-Sprinkle with some of the parsley, basil, garlic, and salt.
-Drizzle with a little oil and a splash of vinegar
-Continue layering the rest of the ingredients (the number of layers will depend on the size of your dish)
