1/4 cup water
1/4 cup nutritional yeast
1 cup sifted light rye flour
1-1/2 cups sifted whole wheat pastry flour
3 teaspoons baking powder
1/4 teaspoon ground cinnamon
1/8 teaspoon freshly grated nutmeg
2 to 2-1/2 cups water
6 egg whites
2 teaspoons cream of tartar
Add the 1/4 cup of water to the yeast to make a thick paste. Sift the dry ingredients and spices together. While stirring, gradually add the water and the yeast-water mixture until you get a cake batter consistency. Beat vigorously for several minutes. Beat the egg whites and cream of tartar until the whites are stiff and will form a peak. Gently fold the whites into the batter.
Do not stir or beat. Use a nonstick waffle iron to bake to your taste.
