Italian Farmers Chickpea Soup

Source: I just invented it myself.. i know i know it ain't superb cooking for sure! :)

Ingredients

- Dry Chickpeas
- Vegetables you like: for instance: yellow onions, spinach, fresh parsley, celery, leek, mushrooms
- Spices you like: for instance onion powder, general purpose seasoning.
- If you want: broth (i actually never use it)

Preparation Instructions

Soak the chickpeas in water for at least some hours before. Boil the water and the leave them soaking in the hot water with a lid on the container, ever better if you re-heat multiple times the water. The more they soak the easier to digest their fibers.

Instructions

1) Drain the water of the chickpeas and wash them under water in case they are dirty

2) Cut in small pieces all the vegetables

3) Put all together in water in a pad, if you want add broth. Let cook for about 30 minutes

4) When almost done add the spices. Not at the beginning otherwise they will evaporate with the water, as a result your kitchen will smell and your food will be tasteless

5) Once you get a dense soup... you're done!

6) VARIANT 1: if you want you can blend and make a creamy soup (remember when creamy it will tend to appear tasteless, need to add some salt or spices if you blend)

7) VARIANT 2: cook until dry and put in the broil for a crispy layer

8) VARIANT 3: Cook the chickpeas separately and until dry, then blend them and put the dry powder that you will obtain this way on the dense soup of vegetables

This recipe is really nothing special... but i just love it, will make you feel full, is tasty and you can customize a lot.
