Rosemary (Fresh or dried) - 2 sprigs
Honey - 2 tbs
Mustard (Grainy) - 2 tbs
Frozen concentrated Apple Juice (thawed) - 1 can
3-4 shallots or 1 small yellow onion - diced
Olive oil - 2 tbs
Salt and Pepper - to taste
Mix all ingredients in a wide bowl and submerge pork tenderloin in mixture. Marinate for at least 8 hours in the fridge. The longer the better.
After the meat is fully marinated, Place on a hot grill or cook in foil for 20 minutes or until cooked through.
Brush on remaining marinade as you grill.
Remove from grill and let the meat rest for 5 minutes
Slice into medallions
Serve with grilled veggies and brown rice.
