6 sweet potatoes
4 white potatos
1 lb lean ground chicken or turkey
2 cans low sodium corn
1/5 onion diced very small
1/2 green pepper diced very small
Peel and boil the potatos.
Cook the ground meat with the onions and pepper. Remember to drain all excess liquids.
Put the cooked and drained meat at the bottom of a deep dish.
Add the corn as the second layer. I often mix the corn with a dash of cayenne pepper and paprika.
Mash the potatos and sweet potatos with just a bit of 1/2 salt butter. Add the potatos as the top layer.
Drizzle some paprika to the top for colour.
Put in oven (350 to 375) for 15 to 20 minutes.
Not the best meal, but great if you need to cook for more than 2 or 3.
