4 ears corn
3 avocados - chopped
1 red onion - chopped
1 red bell pepper - chopped
½ C olive oil
¼ C red wine vinegar
1 TBSP minced garlic
1 TBSP ground cumin
1 tsp chili powder
¼ C chopped fresh oregano
½ C lime juice (~ 4 limes)
shots of Tabasco
salt & pepper to taste
*If doubling recipe – mix only 1 ½ of wet ingredients
Blanch corn X 4 minutes - drain, cool & cut off cob
