2 pints grape tomatoes
1 tbsp extra-virgin olive oil
2 tsp minced fresh ginger
Zest from 1 lime
Juice from 1/2 lime, or 2 tbsp lime juice
1/4 tsp sea salt
1/8 tsp ground black pepper
1/4 cup chopped cilantro (optional)
Preheat oven to 425 deg. F. Line a rimmed baking sheet with foil.
Place tomatoes on the prepared baking sheet and drizzle with olive oil. Use your hands to toss the tomatoes around so that they're evenly coated with the oil. Roast the tomatoes for 20 minutes or until their skins are just starting to break.
Place the roasted tomatoes in a serving bowl. Sitr in ginger, lime zest and juice, sea salt and black pepper. Garnish with chopped cilantro (if desired).
